What is pesto we here you cry. Traditionally pesto is a wet sauce made from crushed basil leaves, pine nuts, parmesan cheese, oil and crushed garlic. Its origins are in the Liguaria region of Northern Italy. More specifically in Genoa, a city which has been the origins of so much great food and cooking. Pesto is most commonly used with warmed pasta. So we decided to take the great flavour of pesto and create a mayo that can be used as a dip, for sandwich mixes, for wet salads or even thinned down and used as a pesto mayo dressing. As is the case with all our flavoured mayonnaise we only use rapeseed oil which due to its neutral flavours enhances the flavour of the pesto and the high levels of oil that we use coats your palate and allows the basil to linger in your mouth.
